These entries were likely made by the sales clerk.  The vertical hash marks to the left of each entry probably indicates that the store's accountant had transferred the transaction to other books.  The entries could have been a record of all sales or perhaps just those recorded as accounts receivable for customers who maintained credit accounts and charged their purchases for later payment.
